Lunch today was a grilled portabella, mozzarella, and vegan boca sandwich!
I simply threw the mushroom and boca on a skillet and cooked until browned.
Then I put them both on 2 slices of sprouted grain bread, and shredded some vegan mozzarella on them (OMG the mozzarella is SOOO good! Even before it is heated/melted). I’m feeling the Panini’s lately, so I popped it in my George Foreman for around 3-4 minutes (this one took longer) and made a wonderful little hot sandwich!
For sides I had a carrot and banana.
Snacks today were blueberry greek yogurt mixed with a little fiber one and a granny smith apple.
Dinner was a new recipe that I got off of HealthyTippingPoint (this girl is so amazing!). She got it off another site that linked to a video, but slightly changed the recipe, so mine follows her changes.
Cooking Ingredients:
Medium sized butternut squash
1 tbsp agave nectar
1/4 cup maple syrup
1 cup water
1/4 tsp ground nutmeg
1/2 tbsp cinnamon
1 tsp vanilla extract
Cooking Instructions:
1) Cut the squash in half to make it easier to handle
2) Peel the squash
3) Seed the squash
4) Slice the into 1/4 inch pieces and half those
5) Put squash pieces into a large pot with all the other ingredients
6) Bring to a boil then cover and simmer for 15 minutes, stirring occasionally
7) Transfer squash (using a slotted spoon so you don’t bring the liquid) to another dish
8) Boil the remaining liquid until it thickens and pour over the squash (*I didn’t do this step, I simply saved the liquid to use at a later date. HealthyTippingPoint says its good with pasta.)
9) Let cool (it’s hard because it smells so good!) and enjoy!
This recipe was sooooo good! The squash was tender and full of flavor. I had the remainder of my chickpea/brocolli/brown rice/goddess dressing mix for a side. YUM!
For a snack tonight I tried my new organic popcorn and topped with cinnamon (of course!) and vegan chocolate chips (I don’t know how I ever lived without these things!) Soooo yummy! I swear this popcorn is so much better than the 100-calorie butter popcorn I was using. I think I’m making the popcorn switch.
Oh, and gym today was 40 minutes of hill walking, yoga class, and Whittle My Waist! I will have picture updates of the halfway point on WMW on Wednesday!
